In West Palm Beach just off Flagler Dr., you’ll find a popular spots for Power Lunches, Brunch and dinner, Le Pistache. This French bistro, with red banquettes and vintage tiled-floors, is run by Executive chef Mike Burgio, formerly Executive Sous Chef at Café Boulud. Flavors here are complex, developed; you know a classically-trained chef is in charge.
Before dinner, try a delicious French specialty cocktails — a Pear or Lavender Martini, or an Enzoni with gin, Campari and lemon. The fresh-baked baguettes and sweet butter will keep you sated while you peruse the menu.
Don’t overlook the salads; the Roasted Beet Salad is amazing: golden beets, baby carrots, herbed goat cheese, slivers of Honeycrisp apple, pistachios and watercress, all tossed with perfect tarragon vinaigrette. We haven’t had a vinaigrette that good in years! A very Mediterranean salad is the delicate French Le Puy Lentil Salad, with roasted carrots, house-made raisins, charred red onion, orange, pistachio and fresh herbs, tossed in tahini dressing.
Classic French small plates range from Onion Soup, gratinéed with Gruyere cheese to Burgundy Escargot and hand-cut Steak Tartare with a quail egg. With a nod to Marseilles and the Med, there’s Spanish Octopus with olives, feta, hummus and Marcona almonds; and even a Moroccan Cauliflower Tagine, a slow-baked casserole with roasted carrots, lentils, chick peas, spicy cashews, dates and coconut milk.
