The Butcher & The Bar is many things: a whole animal butcher featuring regionally sourced, clean meats; a bar emphasizing local and regional liquor and wine, and draft beer from top local breweries; and gastropub dining. The “premium, not pretentious” experience has an old-school vibe with a comfortable cocktail and intimate dining areas, vinyl records playing in the background, and top-shelf old- and new-school cocktails with fresh squeezed juices.
The establishment rejects commercial and commodity food products that are processed, salted and loaded with chemical preservatives. This is a Scratch Kitchen. Lunch, Dinner and Brunch menus change daily, so not everything is available every day. At Brunch, however, count on signature items such as B&B Buttermilk Breakfast Biscuit (house-made, of course) with egg, cheddar and house-made bacon, ham or sausage; Butcher’s Burger, smash-style with the works, on brioche bun; natural casing-NY Style Hot Dog with house-made sauerkraut; and Porchetta on Ciabatta, with fennel & radish dressed in lemon vinaigrette.
Typical Brunch specials might be Biscuit Eggs Benedict, with house-made Canadian Bacon and from-scratch Hollandaise; Breakfast Burrito with house-made chorizo, cheddar, eggs, potato, onion and peppers; or Tenderloin Tips omelet with smoked Gouda, onion and peppers. You get the drift!!
